At a sushi restaurant I visited the other day.
Shinmasa and Hinotori were served as sake to go with the monkfish liver.
I hadn't had shinsei in a while, and it lifted my spirits!
It tasted like no other sake I have ever had before, with a sourness that is addictive and delicious.
As recommended, it was an excellent sake that counteracted the smell of the ankimo and made it even tastier (^_^)
