Chitaburu Junmai Ginjo Wine Yeast
The aroma was a bit acidic, similar to white wine, and the mouthfeel was like a white wine, from the plump and spreading umami and sweetness to the sharpness and astringency that lingers on the tongue.
Excellent balance of sake-like and wine-like flavors.
