Kimimandai Junmai 70% 15% 720ml 1166 yen We visited a small brewery in Toride City, Ibaraki Prefecture. The name of Tanaka Shuzo's representative brand "Kimimandai" was named by Emperor Meiji. We also purchased a summer sake, which was even better than expected. This time it was a fire-brewed junmai. The first sip. There was a gentle acidity. It is not a fruity acid, but a little bit like a myrin-like mass. It has a dry and dry taste with a chili chili texture on the tongue. It is not too sweet and is suitable for eating. It does not interfere with food and can be tasted easily. A sake with a Japanese flavor reminiscent of soy sauce and dashi (Japanese soup stock). It has a blend of nostalgia and gentleness, perhaps because it is a sake brewery run by a couple. The low price is also good. The name of the brewery is "Kimibandai," but I like to call it "Kimiman" when I abbreviate it.
