Junmai Daiginjo, Iimai Hinohikari version drunk yesterday This is also at Yamamoto Sake Shop in Shimanto. I didn't realize how different it was. Is it like Mute Mukan? Not fruity, but savory. The bitterness is strong at first, and the sharpness of alcohol spreads through the taste, but it is not that clear-cut, and the aftertaste seems to settle down in a rounded way. Without any preconceptions, I can feel the rice-like flavor. I think I prefer a regular junmai daiginjo.
