The last bottle we stocked in Akita is Hanayuyuu Omachi.
It has a nice aroma, and the clarity in the mouth gives it a sweet and sour taste that finishes with umami and bitterness, giving us a satisfying feeling that we are drinking Japanese sake.
I usually prefer a simple, refreshing sweet sake made with sweetness and acidity, but I especially like Omachi because it seems to have a clearer outline with its umami and bitterness.
