ミドサー酒呑童子
The color is slightly golden, with a faint scent of ginjo. On the palate, a white peach-like flavor wafts through the nose, and the fruity and gorgeous aroma spreads, while a refined sweetness is sensed. The E/A ratio is slightly high, and the C/E ratio may be due to the relatively high amount of isoamyl acetate. The yeast seems to be 1801, but we are not sure. The mouthfeel is clear and smooth, with a natural, clean sweetness that lingers moderately in the aftertaste. This smoothness, which one would not expect from a 50-percent polishing, is probably due to the advantages of the super soft water used in the brewing water and the Yamada-Nishiki. It is a modern sake that gives the impression of being the star of the show with elegance, which explains why it has been selected several times as a first-class sake for international flights. I would like to purchase this sake in spring and summer. This time, I purchased it as a gift set from Hakurei Shuzo. In addition to the Hakugin no Shizuku, it included a Masu, a glass, and a Daiginjo-shu cake. This cake is very tasty because of the mellow taste of sake. I was impressed when I had it in the past and have been wanting to eat it on a regular basis. I have had many cakes since living in Tokyo, but I can't think of many that surpass this cake (perhaps it is a matter of personal taste). We also obtained a separate boar cup from the same brewery, making it a perfect time for Hakurei lovers.
