Sake from Sabae City, Fukui Prefecture. It is not a member of the sake brewers' association. When I returned to my hometown, the brewer asked me where to buy it, and I went to a store in the Kawawada area on the outskirts of Sabae City to buy it. We are grateful to the brewer who responded to our inquiry and to the store owner who opened his store to accommodate our sudden visit. The sake lees aroma is a little fresh. A little flowery. A thick sweetness comes in, but then a solid pungency with a touch of bitterness and astringency comes out. While the pungency flutters, the swelling umami gradually unifies and converges. You will want to drink it quickly, then it will disappear, and you will want to reach for it again. How about if you heat it up? The mouthfeel is smooth and easy to drink. The spiciness is based on bitterness and astringency. The flavor becomes lighter and more expansive as it warms up, but the bitterness and astringency become a firm foundation, and the flavor tightens up. As the wine cools down, the flavors become more and more intense. The ripened flavor never gets old. It can be served heated or at room temperature. Today, a day late, we are celebrating the Tokyo Yakult Swallows' consecutive pennant race victories.
