When I came to Hama Sushi, there was a sake I didn't know about, so I ordered it. It was quite refreshing and fruity.
I wondered why they had it. I wondered, but it seems that Harumo Sake Brewery was bought by Zensho, which owns Hamazushi and Sukiya.
It is not written on the menu, but according to the brewery's official website, it is a honjozo made with Nadeshiko yeast.
I think it is unusual to have flower yeast in a honjozo, and it is interesting that a chain restaurant has an unusual type of sake. They also have Kagatobi as another sake.
