I found a perfect sake for summer from Ryoseki Shuzo, the brewer of Hanaup.
As the name suggests, it is a sweet noble sake dessert sake, but it is the best sake for food.
It has a lychee-like mouthfeel, an elegant and luxurious rice flavor, and a lingering presence.
Today, I'm enjoying it with ginger meat rolls, steamed scallion, tartar tartare of iburi-gakko and cucumber salad.
I'm looking forward to seeing how it changes tomorrow.
