This is a local sake from Minamisoma City in Fukushima Prefecture.
It has a citrus aroma like a lime and a bitter taste of hops.
The sweetness is moderate and slightly effervescent, like a dry cocktail made with lime juice. A gimlet, for example.
The nuance of Western sake is stronger than that of Japanese sake, and it would go well with pizza and other dishes, not Japanese food.
About 40 years ago, there was a brand of local sake called "Kanekoma" in this area.
Now, the local sake has been revived in a different form and is being developed with a new sensibility.
I hope that the brewer, haccoba, will continue to pioneer the field of craftSAKE in the future.
