The brewery held an event called "Great Harvest Festival" once a year, and we couldn't hold it this year due to the corona, so we bought a bottle of sake from a roadside station in Yamagata.
None of the sweet, spicy and acidic acids are prominent, and the aftertaste reminds me of a so-called dry sake.
For better or worse, the sweetness and aroma of the Daiginjo are not so great, so it doesn't seem to interfere with a meal.
