Kaori
Vigorous to the point of wiping out at the time of bottling.
The color is clear and colorless with fine bubbles.
The aroma is of green apples, white to yellow flowers, white dumplings and rice cake.
On the palate, the sparkling flavor is refreshing, but there is a mild sweetness from the attack, a juicy acidity from the second half, and a strong umami, which gives it a concentrated and drinkable quality with a full flavor. The bubbles are fine but very energetic. The aftertaste has a fruity aroma of rice flavor, and the acidic flavor lingers on the tongue for a long time.
