Natural yeast, wooden vat brewing
I thought I liked Senkou's Mujitsu, but this is delicious... Ikkou? What? Is it a natural yeast? It's certainly sour, but it's easy to drink from start to finish. There are no habits (I felt).
It had a very beautiful taste with a good balance of sweetness and sourness. It looks good even if you drink it in a wine glass.
