This is a summer-only sake from Ryoseki Shuzo, which brews Hanamup. Category : Japanese sake (Junmai Ginjo-shu) Ingredients : rice (domestic), rice malt (domestic) Rice used:Gohyakumangoku Rice polishing ratio:50 Sake Degree: +8.0 Acidity:1.5 Yeast used: Not disclosed Alcohol content: 16 It is a dry Junmai-Ginjo with a deliciously dry taste. I saw this on Ryoseki's official website, The brewery has developed its own "long-term low-temperature fermentation" method. Long-term low-temperature fermentation is a method of sake brewing that takes advantage of the cold climate of snow country to ferment slowly and quietly. The sweet RZ50 Sweet Emotion was delicious.
