The aroma was a bit unique, and the taste was complex, with a burnt, bitter bitterness.
Shuju
Made from glutinous rice. The color is slightly yellow, as if brewed in a wooden vat. The aroma is a bit peculiar to the nose and has a slight umami flavor. The sweetness was just right, but it was also somewhat complex.
Both were served at room temperature at this booth.
The brewer was talking with someone else the whole time, so I had a quick drink and moved on to the next one.
