The word "centrifugation" caught my attention when I was looking at the sake label.
When I think of centrifugation in sake, I think of Ottersai.
Ottersai has been pioneering new methods of sake brewing that are not tied to traditional methods.
One of these methods is the centrifugation of the sake from the mash in an unpressurized state.
The beautiful aroma and swelling of the sake is evident without being lost. A beautiful sake.
I thought it was a sake served at court.
