I did some research and found out that it was the first time for me to try Shirazur Nishiki.
Developed by Hakutsuru Shuzo, it is the younger brother of Yamadanishiki, and it seems to be the hardest rice produced by a limited number of sake breweries including the big names in the 14th, Jikon, and Sakaku industries.
It's like going sharp with the weight of the good booze from the aroma and good taste😊😊.
