Snow Kayasha / Bishu no Sekkei / Junmai Ginjo / Nama Shu 4.5 Purchased at a local sake shop tour in Akita. The "Bishu no Sekkei" is really hard to find. Only sake stores that are members of the Bishu Club are allowed to sell this sake twice a year: in March for the nama sake and in the summer for the bottle-hitched sake. It is a sake that cannot be found in other prefectures. The sake is made from Hyogo's Yamada-Nishiki and "Special A" sake rice from Himeji Kurodasho. Toichi Takahashi, the toji of Yamauchi, is an unorthodox toji who "does not use oar, filter, or add water. He makes the most of the flavor of the special A district Yamada-Nishiki. The balance of aroma, umami, and acidity is exquisite. The flavor of the rice that spreads in the mouth is comparable to that of a Stradivarius (laugh). This is not the level of sake that can be drunk for 1,950 yen including tax. This is a sake that requires a temperature of minus 5 degrees Celsius. It perfectly complements the lack of Kakumon, which I drank at the same time (laugh). It is a sake that can be enjoyed as a stand-alone glass of wine, or even as a food sake. It has too many fixed fans, which explains why it is not released or expanded nationwide. Sake that makes everyone a fan.
