Go to Kochi Prefecture to buy sake. Buy at a roadside station or a supermarket. It is called "Tosa Kinzo".
It is a dry sake with a tangy edge. The umami is modest, but that is what Kochi sake is all about. The lingering aftertaste leaves a lingering chill on the tongue. I might actually like this kind of dry sake.
It is only in Kochi that sake is made based on bonito.
The sake rice is Akebono.
It is made in small quantities by a small brewery. It is probably not available in Tokyo.
