I opened a bottle of sake that I purchased at the Tanzan Sake Brewery during my visit to Kyoto in July, as today was a special occasion! The toji here is a woman, which was quite rare in Japan more than 20 years ago when she became the toji. She aspired to become a toji after seeing her father's work. She dreamed of making sake with her own name someday during her training, and this sake was made possible. He is now the president of the company, following in his father's footsteps. It is interesting to visit a sake brewery and feel the stories and history there! First of all, the rice is home-grown and no pesticides are used. The rice is polished to a 35% ratio to remove impurities, and I feel that they must have been very particular about the various processes. The taste is clear and fruity. The taste is clear and fruity, with a sweetness followed by a spiciness that has a strong presence! It may change from year to year, but I would like to drink this sake again!
