Polishing ratio 50%, alcohol content 15%. The umami of the rice is strongly felt. A little acidity is also felt and passes through the nose. It is a traditional sake. I think it is made with Kyokai No.1 yeast. Am I the only one who senses a little bit of the nama-hashiroshi character? It was an interesting sake with a valuable yeast.
