Purchased at a local sake shop tour in Akita. The Kimura Sake Brewery is famous locally for its "Fukukomachi" brand. Unlike Fukukomachi, the Kakuemon brand is sold only at a limited number of stores. You have to drink it while it is not so well known! This is sure to be a hit modern sake in the future.
The price is a very reasonable 1,760 yen (tax included). It is very easy to drink even though it has a modest alcohol content of 16.5 degrees. You have to be careful (laughs).
The clear, light mouthfeel has a hint of umami and light acidity. It has a pear-like fruitiness. The bitterness of the rice that spreads later on keeps a good balance.
As stated on the label, it is a sake that shows various expressions depending on the number of layers and changing temperature range.
At a temperature of minus 5 degrees Celsius, one can enjoy its umami and light acidity. At room temperature, you can enjoy the lingering bitterness of rice. As a food sake, this sake can be matched with all Japanese, Western, and Chinese dishes.
Personally, I am missing the lingering rice flavor that expands in the mouth at minus 5 degrees Celsius. The Kakumon brand is striving for development.
