Mimuro Sugi Dio Abita" is made from "Dio Abita", which means "God's water" in Italian. It is made from 60% polished Yamada-Nishiki rice grown in cooperation with local farmers. Using a proprietary technique, the sake is once-fired, unfiltered, and finished to 13% alcohol by volume.
