Shinsei / Amaneko / Junmai-shu made with white malted rice (highly acidic sake) 4.5 Shinsei 3 kinds of sake comparison (2) Purchased at a local sake shop. The special dealers are painted out because it would be a nuisance. No lottery or point system. Shinsei is not sold in stores due to the brewery's wishes. We realized the importance of timing and negotiating with the shopkeeper. The temperature of minus 5 degrees Celsius is important. The sake is called "high acidity sake" and the way to make the best use of "acidity" is exquisite, which is typical of Shinmasa. The balance of acidity is exquisite. I want to pay attention to the temperature and the sake ingredients. It has improved dramatically from when I drank it 6 years ago. I would like to match it with white sashimi fish. It can be matched with French and Italian dishes as a substitute for white wine. The alcohol content of 13% makes it easy to drink. It is delicious on its own, but should be used as a "food wine". It is also a great value at 2,250 yen (tax included). Compared to other sake, Shinmasa is a cut above the rest. The Flax Cat Sparkling we drank at the store was quite delicious.
