The color is clear and yellow. When placed on the tongue, it has a multi-layered taste of bitterness, sourness, spiciness and hidden sweetness, while the ginjo aroma goes through the nose. It is the first time that complexity and clarity coexist. On the other hand, it has a subdued taste that does not interfere with the ingredients, making it suitable for all kinds of dishes. If I had to say, it seems to go especially well with smoked and fermented foods.
