Gikyo "Junmai Genshu 70% Specially Cultivated Rice
Brewery:Yamachu Honke Sake Brewing Company, Aisai City, Aichi Prefecture
Rice used: Yamadanishiki (Tojo, Hyogo Prefecture, special A district)
Polishing ratio 70%.
Although the label looks like the title of a chivalrous movie, there are no strong characteristics in the aroma or taste, and it is rather delicate, with a calm and soothing flavor. It has a sweet taste at first, and then the alcohol taste leaves the nose and you can taste the umami of the rice.
Incidentally, gikyo (chivalry) is said to mean to respect justice, to discourage the strong, and to help the weak.
The interesting thing about this sake is that it is sold wrapped in ordinary newspaper. The meaning is said to be to block sunlight, but it is very eye-catching, and the newspaper is a fun way to relive the memories of the day.
