I purchased SHIRO, which is only available in Hokkaido. (At Mimasu Sake Brewery, which I visited the other day.)
The impression is that it starts with acidity, then it comes together, and finishes dry and sharp. The more you drink, the deeper the flavor becomes. Kamikawa Taisetsu Brewery...I have had their Tokachi Honjozo before...what great potential...😂✨It is wonderful 👏👏👏.
