Kaze no Mori Ruyoha Kaze 807
Rating 4.5
Rice used: Nara-grown "dewy leaf wind", 80% polished rice, unpasteurized, 16% alcohol by volume.
Kaze no Mori's classic sake, made with low-polished 80% dewy leaves and fermented slowly at low temperatures with No. 7 yeast and ultra-hard brewing water. The aroma is sweet and fresh, reminiscent of apples and pineapples. The aroma is soft and pleasant. The taste is soft on the palate with a pleasantly bubbly, slightly effervescent sensation that is characteristic of Kaze no Mori. It has a voluminous and relaxed flavor. Fruity sweetness and fresh acidity mix to form a fresh and rich flavor. The complexity of the minerality derived from the brewing water creates a three-dimensional effect and a pleasant aftertaste.
