Kaori
Ecru, 2017, Shoukoku Junmai.
Bottled April 2018, aged in bottle, shipped February 2020.
Moderate aroma. Mild acidity, mellow sweetness and fullness of rice. It has a more rice-like character than the usual ecru. Grapefruit, kosher flour and white egg dumplings.
On the palate, the acidity is very elegant but settled, with a good rice flavor and fullness. The bitterness is faint enough to be crisp, and the aftertaste is rather long.
