Today, I opened a bottle of Jiheiji, which is delicious. It is 100% Yamadanishiki and has no peculiarity at all, so it is suitable for beginners like me.
It's easy to drink, so you can drink as much as you want.
I thought it was a little too light at first, but it's really good when paired with ate. By the way, I grilled some mackerel marinated in miso and used it as an ate. I love a good sake on its own, but I also love a good sake with a meal.
