I'm drinking Choshi sake tonight to go with the bonito. It is a year old sake, so it has aged a little, but not so much that it bothers me. It's rather good with the peculiar bonito. It is a crisp, dry and delicious sake! The entrée is nameko mushrooms. I still have some bonito left over from the fishing.
