こるね＜Acid Po-Wan Light Classic
Aroma: Slight acidity, light alcohol.
The mouthfeel is smooth and acidic, followed by a slightly tangy, carbonated, and slightly umami sweetness. The sweetness quickly subsides, and the umami gradually increases.
If I had to classify it by taste, I would say it is light classic dry. However, it is different from Niigata's light dry light classic. The umami is slowly coming on top of the sake. However, just like Niigata sake, it is a sake to be paired with sashimi.
The dish that went well with the three kinds of entrée was shiitake mushroom pâté. I knew this was going to be delicious.
If I were to use a Ghibli analogy, I would compare him to the head of the Philosophy Department in "From Up On Poppy Hill. At first glance, he looks tough and hard-edged, but he is slowly becoming more and more interesting and cute.
