I went to Fukui Shuzo in Aichi Prefecture from Tokyo to buy some sake.
To be honest, I went there without much expectation. In Tokyo, most people don't know about "Shikaiou".
The exterior of the brewery was covered like a Berlin wall, and I didn't know where to start.

It looks more like a warehouse than a warehouse. The site is huge. We were greeted and given a detailed explanation of the sake. The first bottle was this Yumesansui Junmai Ginjo.
I opened the bottle at home and took my first sip.
It has a mild acidity. The degree of polish is well reflected in the taste. It also has a fruity aftertaste like a green apple, with a nice bitter aftertaste. It's a beautiful sake with no miscellaneous flavors.
