All Akita sake made with in-house yeast No. 6, polished to 55% Akita rice, and fermented at a very low temperature for a long time, finishing in the 13% alcohol range. It has a pleasantly mild, sweet aroma like white peaches, a fresh, soft, sweet flavor, and an elegant, white wine-like acidity that gives it a sharp edge. Overall, the sake was light, refreshing, and easy to drink, with a pleasant new taste with some piquancy and a slight gassy sensation.
