I like this sake so much. This is the fourth year in a row that I drink it. The year before last, it came in second place out of the 423 cups I drank during the year.
The aroma is sweet with a hint of rice flavor. It has the sweetness of melon, but also has a solid structure.
When you put it in your mouth, it is sweet and juicy. The sugar content of the syrup and the fruity melon flavor are rich, and from there, the entire flavor is fuller and richer. Yum!
However, the bitterness is a bit hard. The sweetness is there, but it feels drier than I expected, and the alcohol is a bit tart. This will taste even better if left for a while.
Actually, this was the case the year before last. The first day I opened the bottle, it was a bit hard, but when I drank it again 6 days later, the sweet al fruity melon was in full bloom and I was impressed!
If I were to use a Ghibli analogy, it would be the girl in "The Wind Rises" who did not receive Siberia. She is a cute but a little hard girl who will become a beautiful woman in the future.
