The aroma is rich in rice flavor and beautiful alcohol. And fruity grapes. Ahhh, this is a good sake.
When you put it in your mouth, you can feel the beautiful sweetness and acidity. While the sweetness and acidity swell, the umami and bitterness gradually appear. The sweetness is not too assertive, but withdraws, and the acidity remains and finishes off nicely. It is a very high quality sake. There is absolutely no bitterness. It is calm and gentle, yet has a well-honed beauty.
It's wonderful right off the bat.
The deliciousness sinks in.
If I were to compare it to the music in Ghibli's "Princess Mononoke," it would be "Ashitaka Sekki," the music from the scene where Ashitaka sets off on his journey. This is the first half of the song. Before the grand climax. The sharpened atmosphere of early morning. The taste is full, yet calm and gentle.
