The sake is pressed in winter and stored fresh in ice temperature. It is usually sold by weight at the brewery. The aroma is subdued because it is still fresh, and the fresh taste is immediately apparent on the palate, followed by a full-bodied flavor that spreads. The flavor gradually wears off.
