The Aizan I've been repeating. Ei-kun's Aizan no Yamahai It's very clean, soft and fruity sake. I love the aroma that fills your mouth! It is very sweet and mellow. Like the rind of a light wash, exotic, mature and full of sweetness! A slightly quirky aroma that goes best with light washed cheeses! Characteristic acidity with a farmhouse feel. I have a hunch it would go well with sesame oil or something.
