I bought a bottle last month when I visited the brewery. It was my first time visiting the brewery, and it really is a small brewery. This sake is in its second year, brewed by Jitsukazu, an apprentice toji, with new flavors while retaining the classic taste of Senpyo. 🍶🍶.
Slightly dry, but with a subtle ginjo aroma and plenty of umami, it is a gentle sake. It has a slightly dry taste, but it has a subtle ginjo aroma and is full of umami and gentle.
