<Canadian SAKE which is like sweet sake without sweetness
Following on from the Spanish SAKE, we now have a Canadian SAKE, founded in 2013 by three Japanese people, YK3, because their initials happen to be Y.K.
The color is amazing. It is cloudy with yellowish color. It's full of lees.
It has a strong aroma of sweet sake and lactic acid.
The mouthfeel is thick and mellow. But surprisingly, it's not very sweet. It is mainly sour from the lactic acid, and the sweetness is soft and slight. But it is gentle without being sharp. In the latter half of the taste, umami is also gradually coming.
The back label is made in Japan.
The production date is May 2018. I see, it has an aged sourness.
It's not Ghibli, but if I were to use an analogy, I'd say it's Jimsy from "Future Boy Conan". It's Conan's sidekick. A wild child. Jimsy has a pig named "Umaso", and this sake seems to go well with pork.
Satisfaction level: ★★★☆.
