It has a resinous and woody (cypress, etc.) aroma on the surface, but it also has a very complex aroma with a sour and refreshing feeling. It has the impression of a light white wine.
In the mouth, the acidity and bitterness come in turn and harmonize with the aroma. The aftertaste is short and disappears quickly.
This is the first wine that Richard Joffroy, the former chief brewer of Dom Péry, presented after his retirement. It has the complexity of a Western-style aroma, but the taste is of solid sake, a new sensation.
