The name "Sunday back nine" is a golf term meaning the final nine holes on the last day of a tournament. In other words, it's the most important part of the game, the final stretch. In baseball, it is the bottom of the ninth inning, in soccer, it is loss time, and in sake brewing, it is the time from the top of the tank to the bottling. In the case of sake brewing, the time from the top of the tank to the bottling is the time to put all your energy into it. At Fukurokuju Shuzo, the last part of the sake brewing process is where we need to concentrate the most, hence the name.
This is why we named it Fukurokuju.
