I found and bought this bottle together with Toko. Both the aroma and flavor are wonderful, and it lives up to its Junmai Daigin specific name. The specs are as follows
Rice used = Hachitan-Nishiki
Polishing ratio = 50%.
Sake meter = +5
Acidity = 1.3
Amino acidity = 1.0
