Omachi produced in Akaban is made in the nama-moto style. The acidity of the brewery from the nama-moto process and the softness unique to Omachi are an excellent match. Only the middle portion was bottled for this beautiful and flavorful junmai ginjo. It has a subdued pear-like aroma and a smooth mouthfeel that gives way to a full-bodied flavor. The deep flavor and core acidity produced by the nama-moto process.
Chocolate-like flavor. Sweet umami.
