Shikishima Yamadanishiki Special Junmai Unfiltered Nama-shu with Yeast No. 7
This is the first time we have used yeast No. 7. This sake aims to be both powerful and sharp. This year, the rice is less soluble, and the dry taste is stronger. We used a yeast with bubbles, which is said to give a richer flavor, but the bubbles rose more than expected and it was quite difficult. We strongly felt that this is the reason why everyone uses yeast without bubbles.
