The mouthfeel is sweet and full of rice due to the sake's natural yeast production, and the acidity lingers on the tongue as you drink it. Tonight's sake was served with Japanese dishes such as grilled new akitogi fish. It went well with grilled swordfish. I also enjoyed it with Himalayan rock salt pink salt alone, which has more minerals.
