The Kaze no Mori and Aburacho Sake Brewery, which I've been fascinated by lately.
What I like most about it is the good cost performance.
It's a pure sake, but it has a lot of carbon dioxide gas, so you have to be careful when storing it horizontally because the carbon dioxide is released and the unique crispiness of Kaze no Mori is lost. I remember when I didn't know this and left it sideways before, it didn't have any crispiness at all and I felt like it was that.
Since it is 50% polished, I think it can be called a Junmai Daiginjo.
The use of ultra-hard water, which is unusual for sake, is also unique.
The taste is definitely my favorite sake, with sweetness and a nice lingering aftertaste.
