I thought 🤔 what would be good to pair with seared white meat and grilled mackerel 🤔 and chose this one👍PB sake from Washinoo and Sakamoto Sake Shop in my hometown of Iwate 🍶.
Let's start with this one. The first aroma is sweet with a hint of sourness and graininess. In the mouth, sweetness, sourness, and bitterness are all in one. The sweetness and flavor are thick, perhaps because the alcohol content is a bit high. It is a sake for a mealtime drink.
I served it with sea bream first. The sweetness and umami of the sea bream is well balanced and brings out the richness of the Kurowashi. I think the tartness increased with the sea bream. The sea bream 🐟 has the upper hand: ❗️
The tartness became stronger when it was lukewarm, so it was a better match with fatty grilled mackerel than with seared mackerel.
