It is a direct kumi of Yamada-Nishiki from Futatsugi. It is a sake to be enjoyed with a meal. I think it is just as it is described. Everyone has their own taste for acidity. Let it sit until the acidity you like comes on top. I prefer it on the fourth day. I like it on the fourth day. Thank you very much.
