Brubeck
The first sake of the new year is from Tobe and Sozu in Iyo.
It is an amber-colored, shimmering 11-year-old (or more?) sake. It is an old sake, but it is not that peculiar, and the flavor accumulated over the years in the mountain villages rises gently.
It was a truly delicious sake that made me feel sad that I would not be able to drink it any more.
